Halloween baking: pumpkin rice crispy treats

Looking for an easy but tasty AND cute baking idea to get into the halloween spirit? Look no further because these rice crispy treats tick all those boxes! Perfect for the whole family, bake sales and more. These treats take less than 30 minutes prep time and only use a handful of ingredient.

I followed a basic rice crispy treat recipe from Dr. Oetker which you can find here: https://www.oetker.co.uk/recipes/r/rice-crispy-treats
The recipe asks for:
100g of unsalted butter, in cubes
300g of white mini marshmallows
5ml of vanilla extract
150g of rice crispy cereal
I removed the sprinkles and chocolate from this recipe. Instead you'll need red and orange food colouring, green icing (I used Asda's ready to roll fondant icing) as well as a little oil.
Step one: Add in your unsalted butter, marshmallows and vanilla extract into a pan and put on medium heat. Stir constantly until everything is all melted together.
Step two: Pour your cereal into a mixing bowl and add in your melted mixture. Stir it all in so all the cereal is covered.
Step three: Add your food colouring. Using your own judgement, adding a little at a time. You will only need a dash of red against the yellow.
Step four: Grab the oil and cover your hands - yes this feels horrible but if you don't do this step you won't be able to make lil pumpkin balls, instead your hands will be a sticky mess.
Step five: Roll your treats into balls in your hands. You can decide whichever size you want.
Step six: Let your treats harden in the fridge or freezer for as long as they need. This should take on average 30ish minutes.
Step seven: Get your icing and roll out thin lines, cutting them depending on the size of your pumpkin treats. Twirl the icing lines until you get a the desired look for a stem. Add these stems onto the top of your pumpkins however you'd like!
And that's it! You'll have tasty pumpkin rice crispy treats. Take this recipe as you will. You can choose to add more items like chocolate if you wish. I do recommend adding a little pretzel stick to the top of the pumpkin to act like a stump but sadly I forgot to pick some up when I was doing my food shop... silly me.
